A few words about the company
Kumilio’s purpose is to disseminate the Kimi fig, fresh and dried, a fruit with a strong presence in the history of Greek nutrition that combines sweet taste with rare nutritional value.
The fruit collection begins in the first ten days of August and is completed at the beginning of September. On each visit to the fig grove, we select only the “mustelia” – the figs that are in an overripe state.
They are then split open and placed on wooden racks for drying, where they remain for 2 to 4 days, exposed to the sun and dry air. After drying and sorting, figs of similar size are paired together to form the final product, known as “Kimi figs” or “askada.” Once paired, the “askades” are placed back onto the racks and left in the sun for two more days. The process is completed with natural sterilization through boiling and final drying. No sulfur dioxide vapors are used during sterilization.
In the vacuum packaging, the figs are accompanied by a bay leaf, used as an aromatic and natural preservative.
