Salamousas – Aspromytiko Bean is a special variety of bean found only on the island of Lemnos, with the scientific name Vigna Unguiculata. It is similar to the well-known black-eyed, but it is dry-thermal, it has a smaller size and color. In the past, large exports were made from the island to the Aegean and northern Greece.
Its production presents several difficulties, especially in the stage of purification and separation from foreign substances. Its cultivation, apart from the initial stage of sowing, is manual and is revived in the last decade in central and eastern Lemnos, with the areas of Atsiki and Repanidi being famous for their quality in this species. In 2018 he won the silver medal in the Olymp Awards taste and quality competition.
Try it as a soup with red sauce or as a fresh salad with fresh herbs.
