Agrozimi – Frumenty Politikos!
In the wealthy urban homes of Constantinople, even trahanas had to hide a variety of flavors and aromas. Agrozimi revives the recipe for the traditional Greek frumenty, where durum wheat flour is kneaded with tomato paste, red pepper and onion and then the mixture is dried under natural conditions, to preserve the flavors and aromas. Then we add dried spinach, leek, onion, basil, red pepper and chilli flakes. Smells and flavors from the city, in a dish with unique intensity and depth. Agrozimi – Frumenty Politikos – enjoy it!
