The Throuba olive of Thassos undergoes natural aging on the tree before its harvest and for this reason presents a higher concentration of lipids, carbohydrates and dietary fiber compared to other types of olive.
EAS Kavalas standardizes the Olive Throuba Thassos PDO of Organic Agriculture with minimal salt in a resistant package, impermeable to oxygen so that the olive does not oxidize and keeps its taste and aroma unchanged.
